Sun-Dried Tomato Hummus



Take pleasure in the robust and rich flavors of sun-dried tomatoes combined with creamy hummus. A tasty take on a traditional dip, this sun-dried tomato hummus is great as an appetizer or as a snack.

Ingredients:

  • 1 can 15 oz chickpeas, drained and rinsed
  • 1/2 cup sun-dried tomatoes packed in oil, drained
  • 2 cloves garlic, minced
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons water adjust for desired consistency

Instructions:

In a food processor, combine chickpeas, sun-dried tomatoes, minced garlic, tahini, lemon juice, olive oil, ground cumin, and paprika

Blend until smooth, scraping down the sides as needed

If the mixture is too thick, add water a tablespoon at a time until you reach your desired consistency

Taste the hummus and season with salt and pepper as needed

Adjust the seasonings to your preference

Transfer the sun-dried tomato hummus to a serving dish

Garnish with a drizzle of olive oil and a few chopped sun-dried tomatoes

Serve with pita bread, vegetable sticks, or your favorite dipping options
