Cajun Chicken Pasta
Ingredients:
- 2 boneless, skinless chicken breasts, thinly sliced
- 2 teaspoons Cajun seasoning
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1/2 onion, thinly sliced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 8 ounces fettuccine pasta
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions:
In a bowl, toss sliced chicken with Cajun seasoning until evenly coated
In a large skillet, heat olive oil over medium-high heat
Add seasoned chicken and cook until browned and cooked through, about 4-5 minutes per side
Remove chicken from skillet and set aside
In the same skillet, add minced garlic, red bell pepper, green bell pepper, and onion
Saut until vegetables are tender, about 3-4 minutes
Stir in heavy cream and grated Parmesan cheese, bring to a simmer, and let it cook until slightly thickened, about 2-3 minutes
Meanwhile, cook fettuccine pasta according to package instructions until al dente
Drain and add cooked pasta to the skillet with the sauce
Return cooked chicken to the skillet and toss everything together until well combined
Season with salt and black pepper to taste
Garnish with chopped fresh parsley before serving
