Oil-Free Pesto



It's better for you than regular pesto because it doesn't have any oil in it. It tastes great on pasta, sandwiches, or as a dip because it has fresh basil and creamy cashews in it.

Ingredients:

  • 2 cups fresh basil leaves
  • 1/4 cup raw cashews
  • 2 cloves garlic
  • 2 tablespoons nutritional yeast
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 2-4 tablespoons water as needed

Instructions:

In a food processor, combine basil leaves, cashews, garlic, nutritional yeast, lemon juice, and salt

Blend until the mixture becomes coarse and crumbly

While the processor is running, gradually add water, 1 tablespoon at a time, until desired consistency is reached

Continue blending until smooth, scraping down the sides as needed

Taste and adjust seasoning if necessary
