Slow Cooker Pork Adobada Tacos



Slow Cooker Pork Adobada Tacos are a delicious treat made with tender, flavorful pork cooked slowly in a smoky adobo sauce. You can have these tacos for dinner during the week or at a casual get-together with family and friends.

Ingredients:

  • 2 pounds boneless pork shoulder, cut into chunks
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 cup tomato sauce
  • 1/4 cup apple cider vinegar
  • Salt and pepper to taste

Instructions:

Put the pork chunks, chopped onion, minced garlic, chopped chipotle peppers, cumin, oregano, smoked paprika, tomato sauce, apple cider vinegar, salt, and pepper in a slow cooker

Turn the heat down to low and cover the slow cooker

Cook for 6 to 8 hours, or until the pork is soft enough to shred with a fork

When the pork is done, use two forks to shred it right in the slow cooker and mix it with the tasty sauce

You can heat the corn tortillas up in the microwave or a dry pan

Place a small amount of the soft pork adobada on each tortilla
